Freeze the Mozzarella Sticks until firm (one hour). In the 1st bowl, beat the eggs until well mixed. In 2nd bowl, put the almond flour. In the 3rd bowl, mix the pork rinds, Italian seasoning, garlic powder, and paprika. While you are setting up the breading station, begin heating the oil for frying.
Dip the frozen cheese sticks into the egg mixture, then roll in the almond flour, then dip into the egg mixture a 2nd time, then roll in the pork rind spice mixture. Repeat egg dip and coating for extra crispiness.
Once the oil reaches frying temperature (350° F). Fry the sticks for 1-2 minutes until golden color. Place them on a rack or a plate covered with paper towels. It may take a few batches to cook all of the cheese sticks.
